Vegetarian Fajita Soup:
Ingredients:
1 Large Onion
5 Assorted Bell Peppers (I like 2 green, 1 red, 2 yellow or orange because it looks pretty)
1 Package Baby Bella Mushrooms
2 Small Cans of Black Beans
1 Large Can of Crushed Tomatoes
8 Cups of Vegetable Stock
1 Clove of Minced Garlic
2 TBS Cumin
2-4 TBS Hot Sauce (I like to use Sriracha)
1/2 Cup Cilantro Finely Chopped
1 Cup Rice
Salt and Pepper to taste
Optional:
Tortilla Chips
Sour Cream
Saute garlic, onions, peppers, mushrooms together until caramelized.
Add vegetable stock, crushed tomatoes, cumin, cilantro, and hot sauce. Simmer until reduced by about 1/4, stirring occasionally. Meanwhile cooking your rice in a separate pot.
Add Black beans and cooked rice and cook a little longer until the beans are heated through.
Top with sour cream and tortilla chips and enjoy.
