Exploring Lo Mein

Emily's plans to move to Montreal with her French-Canadian friend, Roxanne, didn't work out-- abruptly. She's crushed, and now trying to figure out her next step. I wanted to make something special for her last night, so I asked her mother what were some of her favorite meals, and Mom said chicken lo mein.

I'd never made chicken lo mein before. In fact, the only Chinese foods I've made are stir-fry and lettuce wraps. Luckily, a few months ago, I stocked up on a bunch of Chinese recipe ingredients, like soy sauce, crushed ginger, garlic, sesame seed oil, etc, and the top-rated recipe I found for the lo mein on AllRecipes.com called for those. (Otherwise, it would have been either pretty expensive to make, or pretty tasteless.)

So after work, I stopped by the store to get fresh chicken tenders, rice vinegar (the only Chinese food staple I was lacking), green onions, and linguine. The process wasn't difficult at all--- truly comparable to making stir-fry. The only vegetables it called for were the green onion and some mushrooms, so I added shredded carrot and water chestnuts (Scott loves water chestnuts in his Chinese food.)

The end result proved to be a big hit, and there was only enough left over for a tupperware portion for lunch. I was kind of proud of myself. Emily left me a really sweet note, too: 'You are sooo sweet! You made my day soooo much better, and you're the only one who has ever braved the food route with me, beyond a milkshake. It meant the world to me - I am so thankful to have you as my sister!!! I love you!! ♥'

In other news, Scott has a job interview via phone today--- like, a really good job position for him, Please keep him in your thoughts and say a prayer. It's a contract-to hire position based in Irving for nearly twice his current salary, and when the hiring manager called him to schedule the phone interview for today at 1 pm, he asked, "So why are you leavng your current company? Are you thinking of selling it?" "No, I'm actually not the owner of the company." "Oh, you just sounded like you were. Never mind."
