In which I baked successful cupcakes, but have not yet quite perfected my swirl...

My tutoring appointment was moved from Monday to Tuesday, so I had a lovely free evening tonight. And what does a Muffet do with a free evening after a busy day at work and an even busier weekend? She Bakes!!!

I made 12 plain cupcakes, should have had more batter... the cases weren't quite full enough. After my trip to visit vmonsta for her birthday and my positive experience with Betty Crocker Chocolate frosting... I had invested in a white vanilla frosting. It piped perfectly! The pressure piped chicks I made a few weeks ago had dried to perfection when I came back from holiday and so I decorated the cupcakes with them and some sugar flowers I had bought. Seriously tempted to use Betty Crocker for my wedding cake commission in July... even if it would be more expensive than making my own. It doesn't taste like a slab of sweet butter just sitting on top of the cake, like most buttercream tends to. Its a sweet vanilla flavour and not too sickly. Liz came to help me... she almost got the hang of it, but is definitely one of those people who squeezes the toothpaste from the middle of the tube which meant her swirls weren't always as full and even as they could have been. We had a good practise on some plates, before scraping the icing back into the bowl and having a proper go on the cupcakes!

Closeups...

This one makes me think about ducks swimming on a pond... I'd have to slightly alter my chicks to look more like ducks... a pooky tail and flatter beak maybe?

I've had a very healthy day... until this evening at least. I went to the gym and walked for 45 mins... I got almost 3km! Plus a trip to the supermarket means I managed a step total of 10417!!! Lots of salad and cottage cheese for lunch, healthy stuffed peppers for tea, and leftovers for lunch tomorrow.
