Some people (and frankly, I'm one of them) just hate their vegetables. It was hard to get any down as a child and it hasn't got a whole lot easier as an adult. Strangely, it doesn't seem to be primarily a taste-related issue for me. It's mostly texture and smell. Raw veggies are impossible; seriously, I get physically ill if I try to force the issue. But chopped small, cooked soft and mixed with something else? I do a lot better. As I stroll towards 50, I've decided that's not likely to change now and I just do the best I can.
One tactic that works fairly well is soups. Tonight I made a batch of what I call Drinkable Veggie Soup. Essentially, simmer your choice of vegetables in broth, then puree. I find this tasty and I manage to get my vitamins in something nutritious. Go me.
