When "Mature Duck" Is On Sale

Just remember that "mature" is a euphemism for "old" and that at least where ducks are concerned, "old" merans tough. When last I was at Vons there was a sale on frozen duck, and since I love duck I bought one. After roasting it for the required 2.5 hours I had something extremely greasy, tough as rawhide, and relatively flavorless.
