the
FUNNIEST VIDEO EVER (it features Iron Chef Morimoto!)
for lunch today, we went out for a coworker's birthday, and i had an awesome salad: a variety of baby greens with walnuts, oil and vinegar dressing, apple slices and goat cheese. so divine! it could only have been improved with some raisins or craisins.
tonight we made a modified version of Kath's hubby's
medium-delicious but muy-satisfying pasta dish: we cooked 2 CSA eggplants, a handful of mushrooms and a handful of frozen scallops with some evoo and a little bit of veggie stock on pretty high heat. in another pot, rob cooked up a big batch of tomato sauce using the our CSA tomatoes from this week and last week. we froze half of the sauce, then poured the rest into the cooked veggies, and then we poured the whole mess over some long, flat pastas (my fav for saucing!) with some parm on top. I don't usually love eggplant, but this was DELISH!!
our CSA was awesome this week: a head of lettuce, 2 eggplants (one purple, one white), a pint of tomatoes, a bunch of turnips (AND their greens!), a head of kale, 5 green peppers, a butternut squash, an unknown winter squash, a couple of onions, a couple of hot pepper and a head of garlic. i CAN NOT WAIT to cut into the unknown winter squash. love it.
we were thinking about going to a local restaurant tonight to get some bread pudding for dessert ... but they'll have it on their seasonal menu for at least another month, so i think we'll stay in and enjoy the fresh-made, low sugar, delish pumpkin pie we made this past weekend ...
