As promised, here's the recipe for sweet potato salad (with the smoked paprika). Its from my Dad, and serves some ridiculous number of people (I think it says 24 servings, but usually people eat way more per person, and it goes for more like 12 or less).
I don't always use the full amount of onions, bell pepper, and bacon. And I want to think I upped the paprika and vinegar. We've made it a few times without enough bacon or whatever, and any way seems to turn out pretty good.
Sweet Potatoes, diced 1" 6 cups,
Russet Potatoes, diced 1", 2 cups
Yukon Gold Potatoes diced 1", 2 cups
Red Onion, Julienne, 2 cups
Red Bell Pepper, diced 1/4", 2 cups
Bacon,cooked crisp and diced 1/4", 2 cups
Mayonaise, 2 cups
Smoked Paprika (McCormick), 2 tbsp
White Balsamic Vinegar, 2 tbsp
Salt, 1 tbsp
Instructions:
Roast Potatoes in the oven, let cool
In a bowl add veggies, bacon, mayo, smoked paprika, vinegar, and salt.
Mix ingredients together to form dressing.
Fold in potatoes and refrigerate for 1-2 hours before using to allow flavors to marry.
