Oh Artichoke - how you confound me

We get a produce box. Sometimes that presents...challenges. One challenge is how two people can possibly eat all the leafy salad greens they give us. Another is what to do with artichokes. I am not from an artichoke eating family. In fact, in speaking to my mother this evening it was revealed that she has never prepared artichokes from whole and in fact probably has never eaten anything but the hearts that come in a jar or a can.

Most foods don't throw me - I'll face down jackfruit and pluots and exotic forms of cauliflower/broccoli - but the humble artichoke isn't as simple as she appears. Some advice says to 'remove the choke' before preparing. All encourage cutting off stems and clipping the poke-y tips of the 'petals'.

So I'm following the advice from my Whole Foods iPhone application. Trim, soak in lemon water and then steam.

I served them with melted butter flavored with lemon, salt and pepper. They were WONDERFUL! I'd do this again in a second. But it does take some time to prep the little suckers.
