These are so yummy and really easy to make, not like a traditional scone where you need to roll and cut. This is Lady Flo’s pumpkin scone recipe.

Recipe type: Scones
Serves: 24

Ingredients
  • 1 tablespoon butter
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 egg
  • 1 cup mashed pumpkin (cold)
  • 2 cups SR flour


Instructions
  1. Beat together butter, sugar and salt with electric mixer
  2. Add egg and pumpkin, mix
  3. Stir in the flour
  4. Spoon large heaped spoons of dough onto trays, giving enough room for spreading during cooking
  5. Bake in a very hot oven 220C for 15-20 minutes

Notes
To freeze, cut fresh scone in half spread with margarine and your favourite spread (ie. honey). Place halves back together and freeze in a airtight container for up to 4 weeks. Perfect lunchbox snack, place in lunchbox frozen, by morning tea it will be defrosted.

  • 800g desiree potatoes, peeled, cut into 5cm pieces

  • 1 cup (165g) chopped leg ham

  • 1 egg, lightly beaten

  • 1 x Basic roast chicken ingredients (see related recipe)

  • 400g dried tortiglioni or rigatoni pasta

  • 1 tablespoon olive oil

  • 2 garlic cloves, crushed

  • 1 small red onion, finely chopped

  • 500g jar tomato pasta sauce

  • 2 cups grated mozzarella cheese

  • 100g baby spinach leaves

  1. Step 1

    Follow steps 1 to 3 of Basic roast
    chicken recipe. Remove skin and meat from chicken. Discard skin and
    bones. Roughly chop flesh.

  2. Step 2

    Preheat oven to 180°C. Cook pasta in a
    large saucepan of boiling salted water, following packet directions,
    until just tender. Drain. Return to saucepan.

  3. Step 3

    Meanwhile, heat oil in a frying pan
    over medium-high heat. Add garlic and onion. Cook, stirring often, for 3
    minutes or until tender. Add onion mixture, pasta sauce, chicken, 3/4
    cup cheese and spinach to hot pasta. Season with salt and pepper. Toss
    gently until well combined.

  4. Step 4

    Spoon pasta mixture into a 7cm deep,
    24cm x 19cm (base) baking dish. Top with remaining cheese. Bake for 15
    to 20 minutes or until golden and heated through. Serve.
