Me: iPhone. The migration to O2 was a nightmare, but I'm very happy now. I loved my iPod touch, and having web & email truly mobile is great. Having to use iTunes is annoying, but I mostly listen to podcasts on the move anyway, and it's fab now that they can be downloaded directly to the device. (It does help that I have WiFi at home and work). The 3G has a standard headphone socket, as well as the standard iPod connector.
A major downside is the camera - it is shit. There are some interesting apps coming out that make it more usable (a timelapse app, and some that wait until the phone is steady before taking a picture) but it's nothing like what you'll be used to with the SE line. So you'd have to invest in a separate camera.
Extra music features: the Last.fm app is great; the Shazam app (tells you what song it can hear) is stunning.
Texting is excellent, it's displayed like a conversation with speech bubbles so you can see the previous messages while you're replying. I love that, it's really well done. More than makes up for the current lack of MMS.
All in all, for your two primary purposes I think it'd be good for you - but for your photography needs it's very bad and in financial terms overall you are probably worth sticking with an SE on your current provider and holding out for a 3rd or 4th gen iPhone with a better camera.
