Last weekend I attempted to make Samoas completely from scratch. I even made shortbread cookies. So I toasted coconut flakes, stirred up my caramel goo and combined them ready to top the cookies. However, I underestimated the stickiness of said goo and there was no way that the cookie and the topping would become one. I was quite disappointed.
Until...I realized that the topping is damn good on its own. So instead of samoas, we have shortbread cookies and samoa candy nuggets. So good.
These went quite well with the Oatmeal Butterscotch and Chocolate Amaretto Peanut Butter cookies I made too.
