I decided to make faux-Quiznos for supper. I took 2 slices of the aforementioned bran & sunflower seed bread. One I put on the toaster oven pan, and the other I left out. On the slice in the pan, I laid out slices of leftover chicken breast, bacon bits, and pineapple. I would have added red peppers, but they had gone moldy. Never eat moldy food, it can make you die. Plus it tastes moldy.
They usually squirt something that looks like Italian dressing on sandwiches at Quiznos (or is that Subway?), so I figured I'd try the same. I didn't have any Italian, but I had Greek Salad dressing with feta. Stupid dressing to put in a squeeze bottle, because the feta chunks clog the nozzle. If you squeeze hard enough to dislodge the feta chunks... POW!!! Oil and vinegar, plus spices and feta all over the place. Anyway I got about the right amount on the sandwich.
I baked this at 350 for about 10 minutes. When it started to get toasty, I opened it up and threw some cheese on it to melt. While that was happening, I toasted the other slice of bread in the regular toaster. I suppose I could have put it next to the other slice in the toaster oven, but I didn't think of that at the time. I was creating. I was in the zone.
So after the toaster popped, I took the other part out of the oven, threw some baby spinach leaves on it (still haven't bought lettuce), put a little more dressing on, and put the top slice of bread on it.
Sweet Jesus that's a tasty sandwich. Next time I will use more chicken and less cheese. But otherwise, it's just about perfect.
