I attempted and kinda succeeded at home made churros yesterday.

I followed the recipe as written. I trust the recipe author. It might be my technique. My attempt was wholesome, but did not come out as I had hoped: like a churro vendor's would.

I looked at three churro recipes online. Two from foodtv, and another from a different site.

So, all three separate chef's recipe's for the dough were basically the same. No variation, same proportions of flour, butter, water, and eggs. Gave me confidence. The part where my results did not match expectations were: the sugar+cinnamon did not adhere well to my churros, so my results were kinda bland. Wholesome, but bland. Missing the sweetness and crunch of vendor-made churros.

(I notice his recipe does not use butter or eggs, so it's simpler, too.)

So, in case the recipe ever becomes unavailable online, going to roughly transcribe it here, so I'll have it to refer to.

Ingredients for the batter ----------------------------- 2cups water 0.25cups vegetable oil 2tablespoons sugar 0.5teaspoon salt 2cups flour all purpose 0.67cups whole wheat flour (or just use all purpose flour) Additional cooking oil for cooking the churros Additional sugar and powdered cinnamon for coating the churros after cooking
In a 2+quart saucepan, combine water, oil, sugar, salt.

Bring to a boil and stir until sugar and salt are dissolved.

Add flour all at once. Turn off heat. Stir vigorously until batter forms a thick smooth ball.

Allow batter to cool.

Then heat additional cooking oil in a pan to about 1inch depth of oil. Do not begin cooking until the oil is hot. (Bayless says 375F!) Extrude batter into cooking oil using pastry bag and large star nozzle 0.5inch diameter or so. Cooking time should be about 3minutes or so.

Remove cooked churros to paper towels to cool about 1minute. Then place on plate containing sugar+cinnamon and coat all sides.

Eat while warm/hot. Try not to burn mouth. Enjoy.
