5. Tutti-frutti Pudding
Throw it together in minutes, bang it in the oven and forget about it.
1 lemon (zest grated and juiced)
1 orange (zest grated and juiced)
1 lime (zest grated and juiced)
2 tangelos (zest grated)
90g butter
330g caster sugar
3 eggs (separated)
5 tbsp self-raising flour
315ml milk
Place half of each quantity of lemon, orange and lime zests and all tangelo zest in a small bowl. Discard the rest. Preheat oven to 180C. Combine butter, zests, and caster sugar in the bowl of a food processor and process well. Add egg yolks and process until smooth. Combine juices in a jug. Add flour, milk and 165ml of juice to butter mixture and process until well combined and smooth. Transfer to a bowl.
Beat egg whites until firm peaks form. Gently fold whites into butter mixture, whites should stay frothy. Pour pudding mixture into a greased 6-cup capacity ovenproof dish. Place dish in a large baking tray and pour in enough water to come halfway up the sides of the dish. Don't get any water into the pudding mixture. Bake for 40-50 minutes or until cooked and golden. Serves 4.
