I would stick with the rice milk, in case there are differences in consistency that might mess things up. But that's just me! Do you notice how your Can-Eat list is so much healthier than your Can't-Eat list? I know that's not the point of a holiday meal, but still, it's a nice bonus! And I say go with the jade nails and lilac shirt. Why not??? --A.

Oh, I wasn't even thinking consistency - I was worried about the taste! But you're right, maybe the coconut milk is too thin. Like trying to make whipped cream with skim milk.

I have been trying to focus on the fact that if I can't eat the Good Stuff, I can at least know I'll be losing some weight. ;)

Last year I had to make vegan dishes for canadian tday. Many of them were yummier than the originals (lots of freaked out research at last minute vegan guest). Savior was Earth Balance spread as butter substitute. Does no dairy mean, no bread? I think there is dairy free bread for stuffing and you could definitely use olive oil for the stuffing.

Is Earth Balance the same as Smart Balance? Cause we bought organic Smart Balance as a spread and it really is the closest to butter that I've found so far.

coconut milk is always the better option, and NEVER "lite" coconut milk.

sorry, just saw your reply from a week or so ago: yes, you can cook with coconut milk...i have a yummy coconut/blueberry muffin recipe floating around that uses it.

also, coconut oil will solve your butter problems. i put that in EVERYTHING. (it's awesome to do asian flavored stirfry with too)

and send hubby to whole foods for one last minute thing: www.coconutbliss.com

get the vanilla...put a scoop of it on your pumpkin pie...you'll never eat real ice cream again. :D

in short: coconut is your savior and should be worshipped as such. :)

I love coconut already - in sweet and savory stuff alike - so it's awesome to have an excuse to indulge in the Coconut Love!

Although, I will most definitely eat real ice cream again. I can't help it!
