Mmmmm. Lasagna.

I attempted (pretty successfully) to replicate a recipe I saw months ago on Diners, Drive-Ins, and Dives. Lasagna with a layer of Italian sausage and a layer of chicken and peppers. So good. I couldn't remember what they did for cheeses, so I winged it with what sounded good to me. As some of you know, I don't usually eat beef and most meet lasagnas use ground beef, so I was really excited to see this. It's like sausage and peppers combined with chicken parm and spinach ravioli -- all my favs in one lasagna. Yummy!



1 lb. Italian sausage, cooked, crumbled, and drained of grease
1 lb. boneless chicken, cooked and cubed
2 bell peppers, sauteed til done
2 jars of pasta sauce
16 oz. bag of shredded mozzarella
1 bag of baby spinach (or you could use reg spinach, fresh or frozen) -- cook down, press out water, and chop fine
16-oz ricotta cheese (I used low-fat)
box of lasagna noodles (I used the no boil kind)

Mix together the spinach, ricotta, and a generous handful of mozzarella until it's all evenly mixed.

13x9x3 baking dish - spray with non-stick spray then from bottom up:
1 cup of sauce
layer of pasta
Italian sausage
handful of mozzarella
1 cup of sauce
layer of pasta
cheese/spinach mixture
1 cup of sauce
layer of pasta
chicken and peppers (alternately, you could put the peppers with the sausage layer)
handful of mozzarella
1 cup of sauce
layer of pasta
remainder of sauce
remainder of cheese

Cover with foil (non-stick) and bake for about an hour at 350 (or what your pasta box suggests). Uncover and baker another 10 mins or so to brown the cheese a bit.

Note: My foil stuck which sucked, so be sure to either use that new non-stick foil or else spray it real good. Or, you could leave off the last step of cheese until you uncover.

Also - I cooked most everything in one pot. First the sausage, then I cooked the peppers without cleaning the pot, and then the chicken (again without cleaning), so I got a nice mix of flavors. I just used a little oil for the veggies and chicken, but you could totally add garlic and any seasonings you want to fancy it up. I was just too lazy today.

In other news, this Friday is my last day at the bank! I cannot wait. Woo hoo! Once I'm back to the wine shop, I'll try to be around more.
