fudge and coconut ice anyway

I had to go to two different stores to get ingredients for today, and I still couldn't find unsweetened, shaved coconut. So I had to use sweetened coconut in the coconut ice recipe.

I knocked off the thumbprint cookies because of that, since I knew I wouldn't have the energy for it. But I did make fudge and coconut ice for the first time ever, by myself. Plus I learned a lot about how to work on both recipes. Both are setting up in the fridge now, so at least I'm sending my man to work with two options for those at work. Although I guess neither one is GF, but he hasn't mentioned anyone at work having any difficulty with eating what comes through. He said there was a cookie cart that they got to after a meeting last week, and it was decimated by their department.

I also spent a couple of hours printing out all the recipes that I had bookmarked on the web. It's about 100 recipes or so, mixed up between afternoon/evening meals (lunch, dinner, sides, soups), breakfast and baking/desserts/treats.

I've always got all these things that I see, and I'm always having to re-look them up. Plus I really don't like taking my computer in the kitchen, so I end up using up lots of post-its because I'll put the ingredients on one to take to the kitchen to work on. So I decided I'd just get off my bum and start making my own recipe book. Besides, I can put notes on the recipes that I print out, and if they taste like doo-doo then I can pitch them and they don't have to live in my working book!
