Been a While

Been a while since I did some cooking, but I just felt like it this weekend, so I thawed a pound of buffalo and a pound of beef overnight, then got to work today while marathoning Robotech on Crackle - yes, THE Robotech.  Harmony Gold has FINALLY allowed all three to be shown!

First recipe is from a recipe book published by my great-grandmother's (on my mother's father's side) church, called Chili Pie with Rice Crust.  I had a regular crust on hand, so I used that instead, but next time I'll give that one a try.  My great-grandmother's church was Presbyterian, but the community was German-Russian, so a lot of the recipes are derived from that.  Before now I've actually never made any recipes from it, but it was nice to go through it yesterday and see my great-grandmother's name and that of my mother's cousin's wife on many of the recipes.  Just because I'm estranged from my relatives now, that doesn't mean I don't still think of them.

Anyway, it turned out pretty good, tho I was too conservative with the chili powder and should have added salt.  And it only used up half the buffalo, so I decided to combine that with the beef and make some meatloaf.

Sorta.

I like making my dishes as one-dish as possible, and meatloaf isn't an exception.  Tho this idea is perhaps a bit too ambitious, as to the basic meatloaf ingredients I threw in cans of French cut string beans and mushrooms, an extra egg, fresh green onions, ketchup, garlic, and the leftover soy/cola sauce from the cola chicken I made a few weeks ago that has been basically frozen in the fridge and has a touch of chicken grease as well.  Then I divided the mix between two glass bowls and have stuck it in the oven for an hour.  So far it smells pretty good.  Cleanup will have to wait a bit, tho I already took care of the meat wrappings and dishes and garbage.

UPDATE: OM NOM NOM NOM!  The meatloaf turned out tasty!  Probably won't be replicatable, but OM NOM NOM NOM!
