Shredded Chicken
1 1/2 lbs boneless, skinless chicken thighs
4 cups water
1 bunch green onion, chopped
1/2 tsp salt
1/3 tsp black pepper
1/2 tsp garlic powder
2 tsp chili powder
1 tsp dry oregano
1/4 tsp cumin powder
1. Wash the chicken thighs well. Add chicken as well as the rest of the ingredients to a large skillet or sauce pan. Bring to a boil. Boil for 10 minutes. Reduce heat to medium-low, place lid onto skillet/pan cracked and simmer for 30 minutes.
2. Most of the liquid will evaporate, and chicken will fall apart when prodded. Shred chicken with two forks.
3. Remove from heat and serve with your favorite taco ingredients.
