I have created a monster.

Alethea's birthday is tomorrow, and when I asked what sort of cake she'd like, she eventually settled on cucumber melon. Cucumber melon cake. This was her fondest wish, and after nearly 15 years of friendship, who am I to say her no?

Well, as it turns out no one else has been mad enough to make such a thing, so here's what happened:




The cake is melon flavoured, the frosting is cucumber, and the garnish is a cucumber twist.

If you're curious,

Melon cake:
2 cups all-purpose flour
1/2 teaspoon salt
3 teaspoons baking powder
1 1/2 cups white sugar
1/4 cup milk
3/4 cup Midori melon liqueur
1/2 cup butter, melted
3 eggs, beaten

Melt the butter, and whisk together with milk and Midori. Beat in the eggs. In separate bowl sift together dry ingredients. Make a well in the dry, and pour in the wet. Mix until just combined. Pour batter into 2 greased and floured 8 inch pans, or lined cupcake tins. Bake roughly 35 minutes for rounds, 25 for cupcakes, or until toothpick comes out clean. Frost with something.

Cucumber frosting: (this makes a crap ton of frosting)

1/2 cup rough chopped persian cucumbers
1 cup (2 sticks) unsalted butter, firm and slightly cold
3 cups confectioners' sugar, sifted

Puree cukes in food processor. Add in sugar and butter and blend until it's a just blended paste. Eat up quick and don't over mix as the high water content in the cucumbers will leak out and make the frosting runny.
