leftovers

I think I'm getting the hang of leftovers. Yesterday I cooked chilli maple dump chicken (so called because you dump all the ingredients in together) and served it with spaghetti and a simple tomato sauce (maybe too simple: no depth) and frozen veg.

Today, I chopped up the chicken; mushrooms left over from the stir fried pork mince from the other day; and red pepper from my lunch and heated them up with the remains of the tomato sauce and the gunk from the dish the chicken was baked in (basically maple syrup and chilli powder) then mixed in wholewheat penne. And it was delicious. Sweet and slightly spicy.
