I am not sure what the person who wrote this cookbook was trying to say.
Tripe is used to make menudo. There is a variety of tripe known as green, and a variety of menudo known as green. Therefore, green tripe should be used in green menudo, should it not? Next time, I shall make pink menudo instead. Not only is pink a more spirited color, but it will complement the feet as well.
((OOC: Menudo is a high-protein dish known as the Breakfast of Champions in its native Mexico. In Netherworld, it is a seething mass of undercooked and unwashed sheep (well, mostly sheep) guts, assorted vegetables, assorted spices that really really should never be used together ever, big chunks of lemon, unhappy cockroaches, and assorted animal feet. There may also be a few cow heads in there in various forms of intact - the pages stuck together at one point and uh. Yeah. Residents may want to stick to the breakfast burritos, which contain less than one-fourth of the unspeakable horror and only one-tenth the feet.))
