Getting ready to celebrate the 4th with some friends. We've been cooking all day ~
Recipe for Texas Caviar
1 can black beans, drained
2 cans shoepeg corn, drained
½ green pepper - diced
½ red pepper - diced
5 plum or Roma tomatoes - diced
2 Tbsp cilantro chopped
2 Tbsp canola or olive oil
1 Tbsp lemon juice
2 Tbsp minced garlic
1 or more jalapenos (removing the seeds from the pepper will reduce its heat)
salt and pepper to taste
Adjust ingredients and/or liquid to suit your tastes. , multiple dips/chips/nibbles, Leading Man's fabulous smoked/bbq'ed ribs, corn on the cob, fresh fruit (watermelon! raspberries! strawberries! blueberries! Rainier cherries! Gotta love summer produce), home-made frozen custard (vanilla, chocolate, dark chocolate, and mint chocolate chip), lemonade (I've made a batch using agave nectar rather than sugar. We'll see how it tastes), iced tea, soda, beer, &tc.
Shall be stuffed silly later today, just in time for the extravaganza Leading Man and the girls have been planning. Fireworks -- up to and including the stuff amateurs really shouldn't have access to -- are legal here, so that's what we do. Welcome to Hicks-ville. :-D
My company's annual meeting begins in less than a week. I have so much to do before we leave that I'm literally refusing to think about it. Denial ~ the therapy of choice for
mmyrtle! I work for a wonderful family business, and they've been gracious enough to allow me and Leading Man to bring the kids along with us this year. It'll be an interesting combination of vacation/work/stress/fun/relaxation... naturally, we're also going to try to visit some friends and family who will be in the area at the same time.
If I think about this all too much, my head will go !boom!. So instead, I'll wish everyone a happy weekend -- with or without holiday, as you choose -- and send lots of ♥
