So...Cooking Cute is going gluten-free for at least 2 months. Perhaps the symptoms that have plagued my dear hubs and eluded diagnosis for almost 5 years are all due to gluten intolerance. He tested negative for coeliac disease a few years back, but the only way to know for sure is to go on a GF diet for at least 6 weeks. Some people feel relief within days; others need anywhere from 2 to 4 weeks to begin to feel better. We've got our fingers crossed.

Anyway, I don't suppose any of you would know how to make gluten-free gyoza skins?
AMATRICIANA SAUCE
Ingredients*
1/4 lb. pancetta, minced or chopped using a food processor
3 cloves garlic, pushed through a garlic press and mixed with 1 tsp. water
1/2 tsp. crushed red pepper
1 tbsp. extra-virgin olive oil
28-oz. can diced tomatoes
1 tbsp. fresh sage leaves, minced
1/2 cup grated pecorino cheese Steps
- Heat the pancetta, garlic mixture, and crushed red pepper in a large skillet over medium-high heat until fragrant, about 4 minutes. Do not allow the pancetta to brown.
- Pour in the diced tomatoes and add the sage. Reduce to a simmer and cook for about 10 minutes, until the sauce has thickened a bit.
- Stir in the pecorino cheese and remove the sauce from heat. Serve over your favorite (gluten-free) pasta!
