Ooooh, daifuku. I loves me some daifuku. Don't try making them, though, unless you're in a really patient mood.

They just got minneolas in my grocery store. I wasn't impressed, but that may have been because they were dehydrated. When I picked some up, the fruit rattled inside its rind! I got a few that didn't rattle, but it was still not too juicy.

Oh, I tried making daifuku. I threw away the first batch. The second was good (I made ichigo), but then I ruined it by putting it in the fridge - the mochi got all hard. :(

My minneola was super juicy!

A little microwaving can soften up hardened mochi. Doesn't do wonders for the strawberry, though.

Yeah - the strawberry leaked a little water while it was in there too. I just have to wait for a lot of people to make it so that they will get eaten all at once. :P

Yeah, that sounds all too familiar. My solution is to make just enough ichigo daifuku for immediate use, and then use the rest of the batch to make regular daifuku, which you can freeze without harming them.
