i don't know about you but when i'm hungry, i want something to eat and i want to eat now!
i made this quick, healthy and flavorful curried chicken salad sandwich for dinner tonight. mmm mmm mmm. it was so good i ate two, count 'em TWO, of them in less than 15 minutes. ain't no shame in my game.
ingredients:
1 cup cooked & diced chicken
1/4 cup chopped celery
1/4 cup diced onion
1/4 cup fat free mayo
1/2 a handful of chopped pecans
1/2 box of raisins
2 tbsp of tomato chutney
1/2 tsp curry powder
baby spinach leaves
multi grain light english muffin toasted
