I put this recipe over in the Cooking community, but I wanted to share it here too. These cookies are from my childhood and the recipe came from my Mom. I haven't made these cookies in years, but this afternoon when I bit into one I immediately was about 8 again. I halved the recipe and used a small (teaspoon-sized) scoop and got about 3 1/2 dozen. The regular recipe makes about 7 dozen.
Applesauce-Oatmeal-Raisin cookies
1 cup shortening
1 cup light brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
3/4 cup applesauce
1 cup all-purpose flour
1 tsp salt
1 tsp cinnamon
1/2 tsp baking soda
4 cups quick oats
1 1/2 cups raisins
400 degree oven 12-15 minutes (my oven took only 8 minutes)
Cream shortening, brown sugar and white sugar until light and fluffy. Beat in eggs and vanilla. Add applesauce and mix well. Sift together flour, salt, cinnamon and baking soda. Add dry ingredients to the applesauce mixture and mix well. Stir in oats and raisins. Drop by teaspoons on greased baking sheet. Bake 12-15 minutes or until golden brown in a 400 degree oven.
Note: The cookies themselves have crisp crust and a very chewy on the inside. If you put them in an air-tight container for storage they'll stick together. I didn't care as a kid, but if you care about appearance you might want to put wax paper between the layers.
