Why do I like fermenting things? I'm not sure, but it's pretty cool.
Probably because microorganisms are pretty easy pets to take care of, not to mention being healthy, and having sort of a pseudo-magical effect of turning one thing into something else.
At any rate, my kitchen counter has a batch of homemade sauerkraut, and a sourdough starter on top, and my mead still rocking underneath.
