Cupcakes

Posted so I won't forget the recipe.

75g butter
60mL sour cream
50g granulated white sugar
3g baking powder
50g white cake flour
grated rind of 1/2 a lemon
Egg

Cream butter and sugar with lemon rind. Beat in egg and sour cream. Sift dry ingredients and mix in. Bake at 190 degrees Celsius in greased cupcake tray until cooked (5-15 minutes, probably, depending on cupcake moulds).

Chill in fridge for half an hour or so.

Cut tops off cupcakes and put whipped cream on, then hundreds-and-thousands, then the tops, cut into two bits per cake.

Serves 4 for dessert with no leftovers.
