I have some sage, but it's probably not the Albanian sage they appear to be selling.
Let me drag out the book... guess I should have the bacon!
1lb dried great northern beans
4 to 6 slices bacon
1/2 cup chopped onion
1 clove garlic minced
2 cups ketchup (book says hunt's)
1/2 cup molasses
1 cup firmly packed brown sugar
1 tablespoon worcestershire sauce
1 tablespoon yellow mustard (book sez french's)
1 teaspoon chili poweder
2 tablespoon magic dust
magic dust is:
1/2 cup paprika
1/4 cup kosher salt
1/4 cup sugar
2 tbsp mustard powder
1/4 cup chili powder
1/4 cup cumin
2 tbsp ground pepper
1/4 cup granulated garlic
2 tbsp cayenne pepper (last time i used red pepper flakes since my cayenne got lost in my spice cabinet!)
Place beans in large saucepan and cover in salted water. soak overnight
drain and rinse beans
return to saucepan and cover with fresh water by 4 inches.
boil, then lower heat and simmer 1 to 1 1/2 hours
mix ketchup, molasses, brown sugar, worstershire suace, mustard, chili powder, magic dust in a bowl
preheat oven to 350 degrees
cook bacon, drain , and crumble
add onion and garlic to bacon drippings and cook over medium heat for 2 minutes. onion should be crunchy
drain beans, reserving 2 cups of bean water, and combine with sauce, add bacon and onion and stir. pour into baking dish and bake for one hour.
