From the start! :D Yeah, it's hard for me to recommended single episodes as I've been watching it fanatically since I was six and love most episodes (well, first two seasons not so much).
Basically anything from the third season on, though seasons 5-7 are definitively the best. Q episodes for the comedy (or for the first intro to the Borg, the episode Q-Who, probably the best episode of season 2). They tend to have "Q" in the title so pretty easy to find looking at a episodes guide (well, Tapestry doesn't, but it is a brilliant episode). Déjà Q, in particular, is great.
And agreed with above for looking for Ronald. D. Moore episodes, especially for the best of the Klingons. For Klingons in general; Sins of the Father (S03), Reunion (S04), Redemption (S04/05), Birthright (S06), Rightful Heir (S06) and Firstborn (S07).
In general;
- Yesterday's Enterprise (third season, one of the best ever eps);
- Darmok, I, Borg, The Inner Light, Time's Arrow, Cause and Effect, The Drumhead (a big political episode that means as much today as it did 20 years ago) (all season 5)
- Chain of Command, Face of the Enemy, Starship Mine, Frame of Mind, Timescape (all season 6)
- Descent and Gambit (both two-parters), Phantasms, Lower Decks, Thine Own Self, Masks (season 7)
Okay, now I'm seriously tempted to put my DVDs on >_
