I first started drinking chai when I went to New Zealand almost 6 years ago. Sadly, in Geneva the only places you can get any are Indian restaurants and Starbucks (which might be why I so often end up there to write). But I found this very nice recipe a few months ago, and I should really make it more often.
As usual, translated from the French, so if you see any weird/wrong phrasing, let me know.
For 3-4 people
Time: 45 minutes overall
Ingredients
8 dl of water (3.5 cups)
15g (0.5 oz) of fresh ginger
1 cinnamon stick
5 cloves
3 star anises
2 pinchs of ground nutmeg (I usually use a little bit more :P)
3 cardamom seeds
40g (1.5 oz) of sugar
4g (0.15 oz) of black tea (Assam, Ceylan...)
2 dl (0.8 cup, and yeah, that's not gonna be very practical I know XD) of milk
Recipe
Peel the ginger and cut it into thin slices.
In a saucepan, pour the water and add the ginger, the cinnamon stick, the cloves, the star anises, the nutmeg and the cardamom seeds and bring it to a boil. Let it simmer on a low heat for 30 minutes.
Add the sugar, cook for another couple of minutes then take it off the cooker.
Add the tea and let it brew 3 minutes.
Filter, then add the milk and bring to a boil. Serve hot.
I've never done it, but I guess you could stop after you've filtered it and keep it in the fridge, then add the milk and bring to a boil later when you want to drink it.
