Spoon Bread!

MMMMMMM.....spoon bread. Good, southern, comfort food. >w< Spoon bread is basically a softer cornbread that....you scoop out and eat with a spoon, hence the name. Conversation earlier today with kanebullar got me craving some spoon bread. I've never actually made it before but IT'S SO GOOD, that today seemed like a good day to learn how to make it! :'D



I'm not really sure what you call this dish - Three Sisters skillet? It has zucchini squash, corn, and beans, which all together not only make a complete protein but also taste DELICIOUS >w< This is really good with fried fish too. Usually I cook potatoes in it too for a one-pot dish, but I forgot to buy potatoes at the store, so today's meal is sans-spuds :'3

Olde Tavern Spoon Bread

Ingredients:
- 3 cups milk
- 1 1/4 cups yellow cornmeal
- 3 eggs, beaten
- 1 teaspoon salt
- 1 3/4 teaspoons baking powder
- 2 tablespoons butter, melted

Directions:
1. Measure milk into a saucepan and bring to a boil. Add the cornmeal; stir until the cornmeal has absorbed all the milk, several minutes. Remove from heat and allow to cool for about an hour. (this is so it does not cook the eggs when you add them). The mixture will be very stiff.

2. Preheat oven to 375 degrees. Lightly grease a 1 1/2 qt. casserole dish.

3. Place the cornmeal mixture in a large bowl. Stir in the eggs, salt, baking powder, and melted butter. Pour into prepared casserole dish.

4. Bake for 35 minutes in the preheated oven, or until the edges are a toasty brown. Serve hot directly from the dish by the spoonful.

Notes:
This is a very basic recipe. It's bland and comforting and good with butter or as a side dish. You can also put in additions to add flavor to the spoon bread - cheese, onions, parsley, other herbs, corn, spinach, peppers, just about anything you can think of. You can add sugar or brown sugar if you want it sweeter. Adding ground meat or sausage is another possibility. Basically it's a good base for using up all the odds and ends in your fridge and making a meal out of them! \o/

I'll probably throw some of this in a bowl at breakfast time with some milk, brown sugar, and butter, and toss it in the microwave to heat it up for a good breakfast >w<

Three Sisters Skillet

Ingredients:

- 1 medium onion, chopped
- 2 zucchini, sliced finely
- 1 or 2 potatoes, sliced into thin disks
- 1 cup frozen corn kernels
- 1 can ranch style beans, drained but not rinsed
- 2 tablespoons vegetable oil
- salt & pepper, to taste
- garlic powder, to taste
- chili powder, to taste

Directions:
1. Heat oil in a large skillet with a lid. Cook onions until softened. Add potatoes and zucchini in layers to the skillet, seasoning with salt, pepper, chili powder, and garlic powder.
2. Cover an cook until vegetables are cooked tender, about 15-20 minutes, stirring occasionally. Add corn and beans and stir until heated through. Serve.

So this time, I omitted the potatoes since I didn't have any. I also omitted the chili powder because I accidentally bought ranch style beans with jalapenos in them. But actually i like that better than with the chili powder, so I might buy them from now on!
