Saito's taking a day away from the mundane business life in favour of a day in the bar.
Day in the life of and all that, you'll catch him at some point.
If he's not taking a totally professional snooze on the couch by the fire (dreaming of ancient Japan or his latest business success), or catching up on his latest business file with a bored frown and a dark cup of coffee by his side, he might be caught later in the evening, sitting near the lake 'meditating' against the sunset, or drowning himself in a bottle of strong bourbon and treating himself to a few sneaky cigarettes.
