The Procuring of Yak Meat

A couple of months ago I posted about the perfect gift for my father. Yesterday I started the process of procuring it. I've done some research and found two purveyors of yak meat. The first was mentioned in the prior post. However, on careful inspection of their website I found that they have a minimum order requirement of $77, plus shipping and handling. That would make the whole proposition over $100, which is a bit more than I wanted to spend. So I continued the search and found a yak ranch in Nebraska called Turkey Hill Yaks. They do not have a minimum order listed and have several cuts of meat available. I e-mailed them to see if they had any tenderloin as it technically includes the filet mignon, and filet of yak was always the threat. The guy responded within a couple of hours saying that he did not think he had much, if any, currently available but that he would have the ranch hand check the freezer to see if perhaps there was one pack (one pound of meat) in there. If they have that, I'll get it for my dad, otherwise I'll see what's available and choose from that - maybe get him a ribeye or two. And while I'm at it, I might just order some for xany and I to try. We're thinking yak NY strip steaks. Or maybe yak burgers. Maybe both. :-)
