Pancakes

I miss 'em. Kind my mother used to make. I don't know how she did it. I have all of her recipes but there is no recipe for pancakes. Guess it's one of those things you just know how to make.

I've had pancakes at IHOP, fancy pancake emporiums, pancakes made by friends and family. I've made pancakes my own dang self. Still, nothing equals the pancakes my mother made. They were fairly thin - maybe an eighth of an inch at the center, crispy around the edges. I think Bisquick was involved and probably some kinda grease, and a really hot skillet.

But, sisters and brothers, they were fine. Couple of pieces of sausage on the side, butter and real syrup; no high fructose corn syrup. Don't think breakfast gets any better. One day I'm gonna find a place that knows how to make 'em, and then - diet or no diet - I'm gonna load me up a plate on a regular basis.
