Life

I need a challenge. I'm bored with my life. Kids, cleaning, kids cleaning, etc. I want to be excited about something. I do have a small something that started last week. maeuschen and I started ballroom dance lessons. I used to dance, so it's really fun to be able to do it again and to dance with my favorite man! I couldn't finish out the lessons last week because I was so weak from my illness. So, I sat down and rested while maeuschen danced with the female instructor. We have lessons every Wednesday until Sept 5th. Then I may go back to belly dancing, or see if maeuschen wants to continue to the next level of dance class.

So, one of the things I'm trying to do is see how far I can stretch our food budget. I want to make tasty, healthy meals for as inexpensive as possible. We spend too much on our food budget. We could use that money for other stuff...like a riding lawn mower for my husband! Today, I ordered from Angel Food Ministries. It's a program that you don't have to qualify for. They are there to help out anybody and everybody. You have to order several weeks before you get the food. I'm going to try it out this month and see if we'll continue in following months. It's fresh and frozen food that's in it's prime. The company searches all over the US to get the best deals on products.

I'm also trying to cook more vegetarian foods. My cholesterol when down almost 50 points since this spring and I think that is from my diet. Lean meats mixed with some vegetarian meals. Today, I made chicken and rice casserole and only used 2 chicken breast halves for the entire recipe. That makes the meal stretch :) I'm actually excited about this. I'm a SAHM and even though I don't bring in much extra money, it's my job to make what we have stretch. I want to also precook meals so that when I'm tired (which comes with how low of iron I have) I can have a nice healthy meal at my finger tips. Kind of like a home done Super Supper, or Dream Dinner. I have to watch my sodium intake, so homemade is the best way for me to go.

So, as I mentioned before, I've been really sick again. I found out I have really low iron levels, I have some other things going on and I've tested positive for the RA Factor, which is Rheumatoid Arthritis. I have to go to a consult for that last. I'm hoping it's a false positive or something that will take a long time before affecting me. I'll find out after I go to the Rheumatology doctor.

Caleb went to Camp Cousin last week and really enjoyed his week away from us. He had a blast with his grandma, pawpaw and cousin. Lots of playing and swimming. I don't think he wanted to come home! It certainly was quiet here while he was gone. Very noisy now that he's back. He starts school in less than a month, though. Kaitlyn may start MMO, also. She'll only go 1-2 times a week. Caleb will go his normal 3 days a week. Caleb also starts soccer this month and his daddy is going to be his soccer coach! I am so proud of both my guys!

Our garden is slowing down on produce. I haven't been able to can like I wanted to. Next year we hope to have a larger garden and maybe I'll be able to put up some produce. Maybe I'll be able to get blueberries next year too. This year the Easter Freeze caused the crop to be low and short.

Oh...Kaitlyn is crawling on the table. Gotta go.

kids, me
