Zinger04 & I picked up this book at Winners for $5 not long before we broke up. I think we'd made one of the 250 recipes w/in a week of buying it & it's sat on bookshelves, or in boxes ever since. Yesterday though, Mom popped by & we found a yummy sounding KG appropriate bean salad that I think I'm going to try. What's especially awesome about it is that it calls for whole cans, so there most important tool for making it will be a can opener!

three bean plus salad
  • 3 15oz cans black beans;
  • 1 15oz can garbanzo beans (that's chickpeas to you & me);
  • 1 15oz can pinto beans;
  • 1pt grape or cherry tomatoes;
  • 1 chopped yellow or red bell pepper;
  • 1 small chopped red onion;
  • 1 tbsp minced jalapeno pepper;
  • ½ c olive oil;
  • ¼ c red wine vinegar;
  • 2 tsp ground cumin;
  • v c chopped fresh cilantro;
  • ¼ c chopped fresh flat leaf parsley;
  • kosher salt
  • freshly ground black pepper;
  • 4-5oz crumbled creamy goat cheese.
Open all 5 cans of beans, drain, rinse, pat everything dry & put them in a large non-reactive bowl. Add tomatoes, bell pepper, onion & jalapeno, & mix well. Whisk together oil, vinegar & cumin in a small bowl. Pour over the bean mixture. Add cilantro, parsley, 1 tsp salt & several grinds of black pepper. Can be prepared up to 5hrs ahead (cover & refrigerate, then bring to room temp 30min before serving). Sprinkle w/ crumbled goat cheese & serve.
Makes 8-10 servings.

Note: Contains tomatoes & dairy products (though, they could both be left on the side, letting those who want them to take them & those who don't to not).
