avocado, peach & strawberry fruit salad
- 2 tbsp honey;
- zest & juice of 2 limes;
- 1 tbsp chopped fresh mint;
- 2 small peeled & cubed avocados;
- 1 sliced peach;
- 175g hulled & quartered strawberries.
Combine honey, lime zest & juice & mint in a bowl & mix well. Add avocado chunks. Mix well to make sure avocado is completely covered. Add peach & strawberries. Leave to marinate for 10 minutes & spoon into 4 dishes to serve.
Per Serving: 210 calories, 17g fat.

warm bacon, avocado & mushroom salad
- 2 pita breads;
- 1 tbsp soy sauce;
- tbsp balsalmic vinegar;
- 2 tbsp walnut oil;
- 1/2 tsp mustard;
- 6 strips bacon cut into 1/2" chunks;
- 250g halved chestnut mushrooms;
- 125g halved oyster mushrooms;
- mixed salad greens.
Toast the pita & cut into 1/2" pices. Set aside. Put soy sauce, vinegar, walnut oil & mustard in a small bowl & whisk into a dressing.
Fry mushrooms & bacon. Add salad dressing & heat.
Combine all ingredients & divide between 6 bowls. Serve.
Ready in 20 minutes.
