Lemon Poppyseed Bread

This recipe is especially for Miss Lindsay... you know who you are. But I encourage others to make this yummy recipe as well.

~Lemon Poppyseed Bread~

1/2 c. shortening
1 c. sugar
2 eggs, lightly beaten
1 2/3 c. flour
1/2 tsp. salt
1/2 c. milk
1 tsp. baking powder
1 T. + 1 tsp poppy seeds
Grated peal of one lemon

Cream shortening and sugar, add eggs. Sift flour. Measure and sift again with baking powder and salt. Alternately add flour and milk with shortening mixture, stirring constantly. Mix in poppyseeds and lemon peel. Bake in greased 5x9 pan at 350 degrees for one hour (or until toothpick comes out clean)

Topping:

Combine 1/4 c. sugar and juice of one lemon. Pour over loaf when it comes out of the oven.
