Successful Gumbo experiment
1 bunch collard greens, chopped
2-3 C water
1/4 C + oil
1/4 C flour
3 cups chicken broth
2 small onions, diced
4 stalks celery, chopped
1 large bell pepper, diced
3-4 cloves garlic, minced
2 jalapenos, seeded, minced
4-6 tomatoes
1 chicken breast, diced into tiny bits
1 can kidney beans
1 bag frozen okra
1/3 bag frozen shrimp
1/2 tsp thyme
(1 tsp file)
1 tsp oregano
1 tsp chili
1/4 tsp cayenne
1 tsp paprika
cooked rice
1.boil collard greens for 10 mns, let sit and steam another 5-10, reserve both greens and water.
2. heat 1 C chicken broth (microwave is fine), while making a roux from flour and 1/4 cup oil. add heated chicken broth slowly, stirring constantly, turn off heat.
3. in big pot saute onions, celery, and bell pepper. add jalapeno and garlic and saute a few minutes more.
4. add tomatoes and chicken breast, saute a few minutes
5. add okra, kidney beans, remaining 2 cups chicken broth, roux, shrimp, collard greens and reserved water.
5. add spices, let stew for a while.
6. serve over rice
result is tasty, though not quite thick enough--but then I didn't have the file powder, so I'm blaming that.
