In my More Fresh Vitamins = Increased Happiness campaign, and because I was craving Mediterranean food, I tried this:
http://spanishfood.about.com/od/vegetariantapasrecipes/r/eggplantspread.htm It isn't the prettiest spread, but it sure is tasty. If you ever want me to eat the equivalent of a whole eggplant, this is they way to do it.
Notes: I used 4 Chinese(?) eggplant because they're smaller and less bitter (wish I'd used the 5th one too because it shrunk a lot), apple vinegar (next time I might use something more subtle), and sea salt. Oh, and 5 cloves of garlic instead of 3. Also, the one negative was it took significantly more oil to fry the eggplant because it kept absorbing it. It might be worthwhile to try roasting/baking the eggplant and adding a little olive oil later in the interests of making it more healthy. I left the eggplant unpeeled, because I was guessing from the picture, which worked out fine. Whee, extra vitamins! Tomorrow, I shall hunt down "rustic bread" before I simply consume it all with a spoon.
