stuffing, dressing, or whatever you call it ...

I am looking for a truly amazing stuffing recipe -- does anyone have one they'd like to share?  I'd prefer that it be moderately simple (I have too much else to fuss with on that day to slave over stuffing) and definitively yummy.

I can offer a recipe for kick-ass turtle pumpkin cheesecake in return (and it does meet the above criteria!)

If I recall correctly, we made it the night before and then just heated it up half-an-hour before serving time.

We added apple schnapps to the stock, 86ed the celery, and futzed around with the spices (because we didn't have all of them). Liquor was used instead of water to rehydrate stuff and the sausage was quality stuff. And instead of cranberries, raisons were used. It was yummy.
