Ichigo Daifuku

I made Ichigo Daifuku yesterday. Yum!

So, what it is is mochiko flour cooked up into mochi (mochiko, sugar, water). Then it is powdered with more mochiko flour (or cornstarch, or potato starch), formed into discs and wrapped around red bean paste which is covering up a strawberry.

The azuki beans (red beans) are boiled and simmered with sugar and a tiny bit of salt for a very long time until they are falling apart, and then they are mashed into a paste (tsubushi-an).

This is a very delicious sweet treat. The beans give it a nutty sweetness, and the strawberry is nice and moist. The mochi on the outside is like eating marshmallows.

I will get a picture of the last two before I eat them and post it here.

Gluten free and dairy free. Both are good things for me!
