does anyone have any ideas for vegan ginger bread cookies? as i've said before, i'm not actually vegan, but i prefer not using dairy products if i can get away with it. i've got a major urge to make some ginger bread men for the holidays, but i worry how successfully they'd turn out if i cut out the dairy. i've found some vegan recipes for ginger cookies, but then they also use vegan dairy-substitutes (non-dairy, non-hydrogenated vegan "butter"), and vegetable oil, and i'm not particularly fond of either. i'd also like to be able to avoid sugar, but in using other sweeteners (agave nectar, brown rice syrup, maple syrup, etc) i'd then mess up the wet-to-dry-ingredient ratio.
which makes me wonder...would trying to come up with some kind of vegan/macrobiotic gingerbread dough be too much effort for not enough output? should i just bite the bullet and make it the good ole fashioned way? maybe hold off until i get home to Maine, that way i won't have to buy ingredients that i wouldn't otherwise use, and there'll be people to share them with so russ and i don't have to gobble down an entire batch by ourselves (although we totally would if faced with the opportunity)?
