Here's what I've been eating lately:
General Smoothie: Nut or soy milk base, casein powder, spinach, banana, cucumber, frozen fruit
We finally got brave and made waffles with our waffler maker! So easy! Paired with greens and scrambled eggs.

What ended up as a stew - so good. Potatoes, carrots, green pepper, chicken, quinoa over rice and arugula.
Blueberry smoothie and half a grapefruit
Our meal out the other week - a tofu bento with edamame, sesame rice, cabbage salad and tofu gyoza.
Haley surprised me with a red velvet cupcake to cheer me up <3 Grim sniffs the cream cheese frosting.
Spaghetti with homemade sauce, prepared with tofu and roasted zucchini and carrots.
Simple chicken and steamed carrots and cauliflower over rice
Green smoothie! Tropical fruit.
Scrambled eggs with pinto beans, peppers, tomatoes and salsa over greens.
Faux chicken over greens, topped with cheese.
Buttered noodles topped with roasted brussels sprouts, carrots and broccoli.
- Still using my version of this simple pasta sauce recipe. I add various herbs and spices depending on my mood.
- Salad dressings: Either my hummus dressing (Scoop of hummus, dash of lemon juice, dash of water, salt and pepper) or olive oil + salt and pepper
- Smoothies: 1.5 cups nondairy milk, scoop of casein powder, couple handfuls of spinach, a banana, a cucumber if I have it (peeled or unpeeled, seeded or not), frozen fruit (typically strawberries and mango or blueberries). Serves 2
- Also snacky. I have a beef stick (Chomps) when I'm feeling a bit off, I also have been eating Built bars occasionally (code Save12 for 12% off), unsulfured dried apricots, and little cookies from Imperfect.
