Yeah, but you always want to kick my husband. :-) That's okay, lots of people do. It would be awfully nice to have a husband who sees the world the same way I do, but oh well, life goes on. He's an okay guy.
*sigh* Everyone always wants to kick my husband. I think I need to write a list of the good things about him. lol. Not denying that he's a selfish pain in the arse a lot of the time, but he's a good bloke too. That probably only makes sense inside my own weird mind.
Ideas that aren't recipes are great, too. I have stacks of recipe books but usually once I've made something once or twice I start to figure it out or change it myself. Once I learn how things are done and what ingredients go together I can usually come up with something. :-)
If I could convince husband and children to only eat meat once or twice a week I'd probably go the organic/free-range/locally produced route as well... my area has plenty of local farms but it's hard to find any with reasonable prices - they're all priced for tourism.
I might see if I can find some reasonable organic milk, though. Good idea. :-)

Sam's spicy peanut butter soup recipe. People thing this is less gross if you call it satay soup though. It is yummy but very spicy. You can always drop down the spices if you don't want it that hot.
baked risotto This one is good. We used to have it with chicken a lot before we stopped buying normal chicken but now we've had it with just veg, TVP, or beans.
Veg soup We still make variations of this one. Any mix of veg. We change the flavours a lot by leaving out the BBQ sauce and adding things like other herbs or using different veg. It's basically based on what we have in the fridge. Our pressure cooker no longer works so we do it in a big saucepan and it takes more like 3 hours to cook down properly though if you like it less mushy and more broth you can eat it after an hour or so.
Pad Thai not bad but not everyone likes tofu

No worries about picking on the husband. In in-person conversations I don't defend him at all but on here I feel like I brought up the subject, and he's not here so I should probably stick up for him. Or something like that. I don't know.
I used to make baked risotto a lot and everyone's sick to death of it. lol. But it's so good!
That peanut butter soup one looks intriguing. I never in a million years would have thought ot put peanut butter in soup. Hmmm. And pad thai looks yummy. I was just talking to someone the other day about tofu. If I can find the right kind I will give it a go.

Hey thanks! That's a really helpful thing to say. I think I get caught up a little in the idea that each meal needs to have a "protein", a "carb", and vegetables. I don't know how true that is, but I do need to re-train myself to remember that protein doesn't only come from animal products.
:) In general, we have a very low-meat lifestyle and Tomer was just diagnosed as lactose intolerant, so we do make a lot of vegetarian meals at home. Also, his iron levels are pretty low (my poor sickly boyfriend, lol) so we're on the lookout for iron rich food as well. Spinach is a good veggie source that I know of and will keep you posted of my future findings :P
My first suggestion is to start poking thru all kinds of "foodie" websites - I'm not much of a recipe follower myself, but they're great at giving a general direction. Not necessarily vegetarian sites - the good ones will have enough veggie stuff anyhow.

I... may be slightly addicted to the Pioneer Woman. If you haven't, you totally have to make her Strawberry Shortcake Cake, it is the most divine cake I have ever created, oh my goodness.

I'm a bit scared of fake-meat subsitutes, to be honest, but I haven't actually tried any so I probably shouldn't judge. I just get a bit squeamish about the number and type of ingredients that must go into that sort of thing. I shall see what's in the supermarket anyway.
Thanks for not joining in the kick-fest. :D Husband is a hard person to live with... but everyone has their stuff. He is getting more supportive about various issues in his old age, so I don't feel completely hopeless about it.
