Made this last night for myself and John, and tried to make "Taco Bell"-style homemade tacos....turned out pretty well, and it was cheap to boot, since I had all the seasonings already.
Ingredients:
1 lb ground beef
1 can black beans, drained and rinsed
1/4 white onion, diced finely
3 cloves garlic, minced
crunchy taco shells, cheese, tomatoes, lettuce, avocado & salsa for toppings
Spices:
- 4 tbspns chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 tsp paprika
- 1.5 tbspns cornstarch
- 1/4 tsp sugar
Mix dry spices together in small bowl. Brown the meat first with garlic, over med-high heat; drain of any excess fat or water. Add 1/4 onion and black beans, 1 cup water, and all the blended spices, and mix well, simmering over low heat for approximately 15 mins uncovered to reduce. Add to taco shells and top with veggies and cheese.
