Typically, in times of stress and panic, people have certain behaviors they cling to. Kurenai, for all her knowledge of psychology, was no different. When things got rough for her, she would either drink, run away, or go do something she considered 'daring'. Putting on a semi-revealing dress and taking Latin Dance lessons seemed like a perfectly daring thing to her, so when she saw they were available she signed up.
So she didn't have a partner, and she wasn't exactly feeling the most confident without a drink in her hand - attitude was everything. She was walking as if she was in charge, watching the instructor and practicing the moves with whoever was willing to dance with her.
She was hoping to dance her way to a better mood, forget the stress of her father missing her mother and her severe ineptitude in relationships. She could only pray it would work.
