raspberry beignet, or recipes to classic prince tunes
actually, because it was baked and not fried, it was really more of a muffin than a beignet. I have this nasty buckwheat pancake mix that when mized according to directions makes dark dry atrocious pancakes that are to syrup what black holes are to matter on its own, so i've been looking for other things to make by cutting it with other dry ingredients.
and this worked pretty well:
preheat oven to 350, blend
6 tbsp butter
3 eggs (made a little much - i might usse 2 for 2 people next time)
1 single serving cup thing (couple tbsps) of applesauce (cinnimon flavor)
stir in a pinch or so of baking powder, then pancake mix and flour, 1 part mix to 2 parts flour, by spoonfulls until you get a doughlike texture (like bread, not cookies), adding powdered sugar to taste. then mix into the dough about 1/5 a package of fresh raspberries.
put 1/3 of the dough into a greased bowl, kinda hollowing it out a bit for the bottom. cook that in the oven for 10 minutes, then take it out and pile the rest of the raspberriies in the center of the dough. sprinkle with powdered sugar, spoon a dollop of marscapone, and carefully cover with the rest of the dough. dust the top generously with powdered sugar so it cracks when it cooks.
I cooked it on 350, checking it every 15 minutes or so, until a knife stuck in the center came out clean and the rsapberries and marscapone were bubbling out of the top. I picked it out of the bowl with 2 forks and ate it with a side of blueberries rolled in powdered sugar and marscapone. like molten breakfast for dinner, delicious.

i just may be the perfect woman. not only do I act, think, and pick up (to put it politely) women like a one's best dude friend, I am easy on the eyes ( and i only look high maintenance) and in bed... AND i cook, srsly, what was he thinking. his loss obviously.
edit - i have a heart of steel and i do not clean well, if at all. well, everyone needs one or two flaws. or maybe that just confirms the fact that i'm a guy in a girl's body. at any rate, this past week reminded me that I'm awesome, and if you don;t think so, you're fucked in the head.
